In the interest of not actually introducing myself again (click here if you want more deets), I thought I’d do a roundup1 of some budget-friendly recipes—all serve about 4, for under $16—I’ve written over the past couple years that you maybe haven’t seen. Hope you try some, and I’ll be back soon with a new recipe.
Marinated Eggplant Flatbreads with Lemony Yogurt, $14
Curry Chickpea-Loaded Sweet Potatoes, $10
Swap in 1 (15-ounce) can chickpeas, 1 (15-ounce) can coconut milk, 1 chopped medium onion, 1-2 tablespoons curry powder for Heyday beans if you can’t find them. Season with salt and adjust ingredients to taste.
Spiced Tomatoes and Beans on Polenta, $14
Enchilada Bean Tostadas, $8
Swap in 1 (15-ounce) can black beans, and 1 cup red enchilada sauce for Heyday beans if you can’t find them. Season with salt and adjust ingredients to taste.
Chickpea and Root Vegetable Fritters with Dill Yogurt, $11
Kimchi Bean Noodles with Zingy Cabbage, $10
Swap in 1 (15-ounce) can navy beans, 1/4 cup chopped kimchi (and brine to taste), 1-2 teaspoons maple syrup for Heyday beans if you can’t find them. Season with salt and adjust ingredients to taste.
Spicy Shrimp Pasta, $16
Rotisserie Chicken and Greens Pot Pie, $16
Vodka Beans and Greens With Garlic Bread, $10
Swap in 1 (15-ounce) can cannellini beans, 1/4 cup heavy cream (or canned coconut milk), 3 tablespoons tomato paste, and 2 grated garlic cloves for Heyday beans if you can’t find them. Season with salt and adjust ingredients to taste.
